A day of variety

Dear friend made delicious soups to try. This was broccoli couscous and the other was a delicious lentil soup (not pictured). I had it with my favorite butterfly crackers, also given to me, by a coworker. Thank God for this, and every meal!
And yet again I forgot to record breakfast on this Tuesday meal but It was delicious eggs and a hot biscuit from the cafe at work. Of course I had some jam on it, although I would prefer 100% fruit spread...I enjoyed it.

As for Today
Well today I left my camera at home so all of the work meals didn't get the attention that they normally get. I slept in and didn't pack. For breakfast I had a small coffee (black) and one egg and two egg whites on two pieces of whole wheat bread made at the cafe at work. I had it with a pack and a half of jam.
Drank LOTS of water. A medication that I am almost off of has required quite a bit of water drinking and heavy food intake latley. Anyway, I had at least two liters at work today and another liter or so at home.

For lunch I had a huge ranch laden salad with eggs and such. I crave these salads with homemade ranch!
A burst of Bazi for my vitamin D and B needs this evening.

For dinner I had some "chicken" patties cut up into strips served with organic bbq sauce and steamed brussels sprouts- one of my favorite veggies! I know these are steamed but please don't knock brussels sprouts until you have tried them roasted!

Rise and Shine, lunch was mine!
I decided on eggs and a new type of vegetarian sausage links. Needless to say I didn't like how either turned out. I left my fried eggs sitting out too long and they got cold. I didn't wind up eating them. I pretty much forced down the sausage- I won't be getting this brand again...
This wasn't much of a meal. Since breakfast I've had a delicious lunch which was stir fried brown rice and seasoned steamed Asian vegetables. I topped it with some toasted sesame oil, low sodium soy sauce, and hot chili sauce. Soon after I had a snack of tortilla chips and a cup of coffee with almond biscotti (yum!).

Pizza Fest!

Yummy! This veggie pizza from Papa Johns well done with thin crust was delicious!
It weighed in at about 210 calories per slice and I had 2.5 slices... The "apple pie" dessert was the worst at about 480 calories for four sticks and I had 5... needless to say I was VERY full and feeling VERY puffy afterwards.

A Yummy Quick Veg Chili for Lunch

I didn't feel like sweating over anything in the kitchen and I don't have much on hand so I put together this chili that came out delicious! It included a can of fire roasted tomatoes, seasoned black beans, half a bag of frozen corn, leftover frozen broccoli, cumin, turmeric, garlic powder, salt substitute, garlic salt, ground black pepper, a dash of cayenne pepper and vegetable juice. I topped it off with a little hot sauce before serving. Chowed down on two bowls of this one. Next time if I'm feeling up to it I'll add some diced celery an onions.

Sushi for Dinner

My girl and I went out for sushi at Dancing Wasabi tonight after shopping. I enjoyed green tea, edimame, a california roll, and a custom cucumber and cream cheese roll. I didn't eat it all and I also didn't catch it all via photo (aww) but I did get one shot to share!
Its beautiful!
Looking back and reflecting on today I see that I only had two meals and a snack and I spent much of the day hungry or super full. This is not how I would like to live on a daily basis. My energy and mood are much more steady when I have five or six small meals a day or three home cooked meals per day. I also noticed that the lobster dip that I had earlier did not sit well with me at all- while we were at the table I poured about two teaspoons of grease off the top of the serving dish, so I think that had something to do with it.
I had a cup of black coffee earlier. That curbed my appetite. Goodnight until tomorrow.

We got a gift card to Red Lobster for Christmas. Red Lobster doesn't offer any vegetarian entrees. I tried some lobster dip and pasta with lobster. My stomach hurt immediately after tasting the dip but after a while I think my body "remembered" how to handle the greasiness... For now.
The day was off to a late start so this meal was my first for the day. I estimate this meal tops 1500 calories easily. I had chocolate chip and white chocolate macadamia cookies for a snack a few hours later.
What a way to start the New Year eh? I'm not concerned. Working hard in the gym pays off and an occasional treat doesn't hurt.
